Casual full-service dining, offering imaginative, seasonal, contemporary, French American classics, historic ambiance, seating for 50,
Wednesday – Sunday, dinner only with a Sunday Brunch. 
Newly renovated ballroom with additional outdoor tented space to accommodate up to 250 for weddings, all type celebrations and corporate meetings.


Responsibilities:

Overall responsibility for all food purchasing, production and execution of product for restaurant, banquets, meetings and special events.
Set standards for culinary operation, execution and quality product delivery.
Manage, train, develop and schedule a BOH team of 10+.  Manage labor cost.
Maintain traditional core menu items while introducing new, innovative, relevant menu items. 
Projections for labor, ordering and prep.  Waste reduction.  Food and small ware ordering, product quality, purchasing budget, food cost and vendor relationships. 
Lead monthly inventory accurately.
Reinforce standards for kitchen sanitation and cleanliness and ongoing projects.
Work closely with the GM, Restaurant Manager and Director of Sales.
 
Qualifications:

5+ years of culinary management experience with high-volume, higher-end catering operation from restaurants, private clubs, resorts or hotels.
Prior experience in leading, directing, motivating and developing BOH teams. Plan, organize and direct the work of others effectively.
Ability in meeting and maintaining budget goals.
Experience in menu planning, costing and execution
Serve Safe certification.  5-day, 50-55 hour work week.
